Holiday Lemon Cream Cheese Chocolate Chip Cookies

Christmas is getting close, and it’s always been one of my favorite holidays. I love picking the perfect gift for the people I care about and then seeing their faces when they open it. In my younger, less anti-social (or rather, less filled with work during normal hours) days, I could wander the malls forever (back when we had more malls here. And not really forever, but for a while). I love the lights, the people, the sounds, the smells…

And the cooking. I get all kinds of domestic for Christmas. Or at least, a little. I like making sweets. The years have taught me that working with a bunch of guys (is it possible I pull story ideas from previous jobs? I’ll never tell
😉), a lot of them single, means that food makes great gifts for my coworkers.

One year, two of my best friends at work were single guys. I found this cookie recipe and pretty much tried it out on them disguised as a Christmas gift. It went over so well that I’ve made it my go-to every year. I think the response was something like ‘next time you get bored, if you wanted to make these again…’. Making these will occupy my kitchen this weekend, at least for a little bit, because fortunately they’re really quick and easy to make.

Lemon Cream Cheese Holiday Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1 3oz package cream cheese, softened
  • 1 cup sugar
  • 1 tablespoon milk
  • 1 teaspoon lemon extract (you can substitute any kind of extract here. I’ve used cherry and orange as well. Sharper flavors stand out better)
  • 1 1/4 cups flour
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup mini m&m’s
  • Red and green food color (optional)


Preparation

  1. Preheat the oven to 350 F (176 c), grease 2 baking sheets
  2. Beat together cream cheese and butter at medium speed
  3. Beat in sugar, milk, and lemon (or other extract)
  4. (optional) split mixture into two bowls. Add 2 drops of red food color to one, and 2 drops of green to the other. Divide flour into two equal parts.
  5. Beat in flour, 1/4 cup at a time until blended.
  6. Stir in chocolate chips and M and M’s


  • Drop rounded tablespoonfuls onto greased baking sheets, 2 inches apart.
  • Using a spoon, flatten each cookie slightly
  • Bake cookies for about 10 minutes, until set and golden.

The Xenadocin Trials were carried out over the course of two years in the early 1990s. Back then, Broad River University had a strong reputation for experimental drug development, with a number of high-profile successes. Records of the Xenadocin Trials are, however, extremely difficult to come by, even in the university’s own archives. Urban legend has it that the researchers involved shredded much of their work when the story hit the newspapers.

The facts of the case as they are generally known are quite simple. Xenadocin was intended as a preventative therapeutic for a range of conditions, primarily heart failure. However, the drug had a number of unintended side effects – side effects which are aptly described by one participant in this personal account from a post-trial interview:

I didn’t notice anything at all until about an hour after the first dose, at which point the effects came on rather strongly. The most overwhelming impression I had was of… well… arousal. One minute everything was normal, and the next I felt this incredible rush of desire. Suddenly it felt as though if I wasn’t able to get off in the next few minutes I might just die from frustration. It really was that immediate and that urgent.

It did shock me, somewhat. I remember sitting there, sweating profusely. There was a nurse who was taking my observations – a very pretty nurse with a button nose and a streak of pink in her hair. I could smell her, and having her body that close to me, all warm and soft and feminine… it was almost too much to bear.

I did whatever I could to distract myself. I counted to a hundred, and then backwards down to zero. I imagined the most unappealing things I could to try and switch off that arousal… but it just wouldn’t go. I was rock hard, and even shifting in my seat was enough to kind of… well… stimulate me.

Pretty soon it was almost out of control. I had to excuse myself and go to the men’s room and… well… deal with the situation there. It didn’t take long, I can tell you. As a matter of fact, I barely had to touch myself before I was done – that’s how turned-on I was.

“Be back in a minute,” Adrian shouted to the guys. Then he escorted Annette to her car. “Make it quick. What about Melody?”

“Don’t act as if you don’t have a clue. You tell me you like her, then you write some stupid song about her and get her upset. What’s going on with you two?”

“Calm down. Everything’s fine. I talked to her after school and I promise everything is great between us.”

“You must think I’m an idiot. Why don’t you leave her alone? Forget about her first day at school and let her live without your vengeance. She’s one of the best friends I’ve ever had and she’s very sweet.” Annette tossed a glance to the girl waiting on Adrian. “She’s not like the trash you’re used to.”

“You think I don’t know that?” Adrian leaned on Annette’s car. Hell, that’s what I like about her—and hate about her.

“Then leave her alone. She’s not your type.”

“Forgive me?” He stared down at her, pushing his bottom lip into a pout.

“Look, I believe you’re telling the truth about liking Melody.” Annette pulled from his embrace. “I think she likes you, too.”

Annette turned to the girl who was still waiting for Adrian’s return. She was staring at the two of them, arms crossed, rolling her eyes and tapping her foot.

“Be careful with Melody. I’m serious. She’s not like these girls. She went to an all-girls private school. She doesn’t know much about guys and dating.”

“I’m not so sure about that,” Adrian scoffed. “She’s always talking like she’s been around. After the scene with her today, I almost believe it.”

“What scene?”

He smiled wickedly. “In her car. She may not know much about guys, but someone taught her a thing or two. She kisses like a pro.”

Annette’s emerald eyes widened. “You kissed her?”

Adrian’s grin stretched wider as he thought about it. “Yeah, and it was fucking amazing.”

“Well, don’t go teaching her anything else.” Annette poked a finger into his chest. “I know you. You’ll have sex with her once, and ditch her.”

Annette shook her head as she eased into her car. “You’re crazy, Adrian.”

Our suite is on the second floor of the hotel. As soon as we get inside, Nick switches on the lights, and I feel a flutter of apprehension. My legs are weak and it’s a struggle to put one foot in front of the other. I can’t believe I’m about to do something I’ve dreamed of constantly since the first day we met. And yet, a part of me is petrified I’ll end up disappointing him. It’s been so long, and I’m so out of practice. What if this is all a big mistake?

Folding my arms across my chest, I step into the bedroom area of our suite. It’s breathtaking, with a king-size bed, leather-panelled walls, a plasma-screen TV and a balcony with a panoramic view of the River Thames. By the window is a large cocktail cabinet, a gas fire and an ornately carved walk-in wardrobe. To my right, a glass partition slides back to reveal a spectacular bathroom with marbled walls, a huge stone bath and a gold-plated shower.

Suddenly, I start to panic; things are moving too fast.

“I’m sorry. I don’t think I can do this.” I turn to go, but before I reach the door, Nick’s in front of me, barring my exit.

“Please don’t go,” he begs, slipping his finger under my chin so he can see my eyes. “Nothing’s going to happen if you don’t want it to. We can just sit here and talk, or watch a movie. I don’t want this night to be over. Please, stay. Is that too much to ask?” I stare up at him and for the first time, I see a desperation that almost matches my own. “Nothing’s going to happen,” he repeats. “Scout’s honour, I promise to be on my best behaviour. I just want to spend some time with you, Carly.”

My head is screaming for me to get out of there, but his eyes hold me entranced and my body is refusing to take instruction.

At last, I let out a sigh. “All right, I’ll stay.”

Bowing my head, I allow him to lead me over to the bed, and for what seems like forever, the two of us sit side by side, looking away from each other, the air thick with unspoken tension. My arms are still folded across my chest, putting up an invisible barrier between us. The screeching silence pulsates through the room like an electric current.

I start getting heart palpitations; Nick’s giving me long, lingering looks that make my body tingle. He’s probing me deep, reading my face like my features are hieroglyphics.

Suddenly, he leans forward and whispers, “You’re so beautiful. Can I touch you?”

I catch my breath then nod slowly.

Cautiously, he reaches out and tenderly caresses my cheek with the back of his hand. Then he gently strokes my hair and the dip and hollow of my ears, his fingers warm and slightly shaky. With a shock, I realise he’s just as scared as I am, and this knowledge makes me feel a little less insecure.

Slowly, his hand travels down the side of my face, then down to my neck, and lightly caresses the sculpted base of my throat. As he works his way back up, tracing the outline of my veins, I marvel at the silky softness of his fingers.

“Shall I take off your jacket?” he breathes.

I swallow hard. “Y-yes.”

With deliberate slowness, Nick eases off my coat and drops it to the floor. Then he takes off his own and I find myself becoming aroused as he fixes me with an expression so hungry, it’s like he’s got me paralysed. Desire spreads under my skin and burns me all over as he sits back down next to me. His sweet cologne is making my head spin.

“You’re trembling,” he observes.

I drop my hands into my lap. Damn. He wasn’t supposed to see that.

“Don’t be afraid …” He reaches out again and delicately touches my lips, my nose, my eyelids. I arch my back and moan softly as his strong hands slither down to my waist and pull me closer to him.

I nod mutely.

The force of his need leaves me breathless, his soft lips eating me out like he wants to consume every piece of me. No one has ever kissed me this way before, and the depth of his passion tips me to the brink of insanity.

For what seems forever, our tongues glide together in a flurry of unrelenting lust. Finally we pause for air, and the room is quiet except for the sound of our heavy breathing. Nick stares down at me, his body shuddering in a way that indicates he’s trying mighty hard not to act on a violent impulse.

Instinctively, I raise my fingers to my lips; they feel all puckered and bruised.

“It’s been so long,” he murmurs. “So very long …” His hand snakes around my back and starts to lower the zipper of my dress. I moan as he brings his face level with mine and whispers, “I promise I won’t go too crazy.”

Do you feel that writing is an ingrained process or just something that flows naturally for you?
When it comes to writing, I’ve got to admit that I’m a total pantser; I write without a roadmap and let my characters lead the way with the story. I know some writers prefer having a story outline, but for me I find it restricts my creativity. Some of the best plot twists I’ve ever come up with happened when I allowed my characters to lead me by the hand and take me where they wanted to go.


What mindset or routine do you feel the need to set when preparing to write (in general whether you are working on a project or just free writing)?
I love listening to music when I’m writing. I put my headphones on and find a song or album that fits with the type of scene I am trying to create. Music sets the mood and inspires me to create scenes and actions organically. I tend to write in one-hour sprints, then take a break to think about my next scene, and then do another sprint later on in the day. Wherever possible, I try to write a little every day as it keeps me on my toes.


Do you take your character prep to heart? Do you nurture the growth of each character all the way through to the page? Do you people watch to help with development? Or do you build upon your character during story creation?
I’m definitely a big people watcher. Many of the characters in My Sweet Vampire are based on people I’ve met or have aspects of their personalities. I believe this makes the characters more authentic and believable. I also like to create flawed heroes and heroines as nobody on this Earth is completely perfect, and in a way, it makes them more loveable.


Have you found yourself bonding with any particular character(s)? If so which one(s)?
I can definitely relate to Carly Singleton in My Sweet Vampire. As a young woman, I too experienced some of the same challenges and pressures from society such as expectations to start a family, move out of home by a certain age and stand on my own two feet. Learning to be an adult and trying to let go of your childhood can be a challenge. Carly’s mental health struggle is also massively close to my heart as it’s something I am very passionate about.


If you could have a dinner/dinner party with 7 fictional characters, who would they be?
Spiderman, The Mad Hatter, Edward Cullen, Paddington Bear, Mr. Micawber, Holden Caulfield, Bridget Jones.


Where would you spend one full year, if you could go anywhere, money is not a concern? What would you do with this time?
Newquay in Cornwall. And I think you can guess… I will be taking my laptop with me!
